This trip we decided we wanted to save money on food. We decided to prep and make meals to have more on the roads than the typical sandwiches and chips (we have those too). We opted for a couple family favorites and a few new recipes.

Cream White Chicken & Artichoke Lasagna - Kraft Recipe
Baked Chicken Fajitas
Chili - Bagged in an X-Large ziploc bag
Ingredients:
- 2lbs ground meat (beef, turkey, chicken)
- 1 yellow onion (diced)
- 1 bell pepper (seeded and diced)
- 1 jalepeno (seeded and finely diced)
- 3 stalks celery (chopped)
- 2 cans diced tomatoes
- 1 can tomato juice
- 4 cans kidney beans (light, dark, or white)
- 1 1/2 tbs garlic (minced)
- palm full cumin
- 1/2 palm full coriander
- 2 palms full chili powder
- 1/2 tbs olive oil
- salt & pepper to taste
Directions:
- In one pan, brown meat with onion and salt & pepper.
- In a stock pan, heat olive oil add peppers and celery until soft, stirring often.
- Add garlic to stock pan cook 2-3 min, stirring often.
- Add beans and 1 palm of chili seasoning to stock pot. Cook another 3 min, stirring often
- Add cans of diced tomatoes (including juice) in stock pot with the rest of the seasonings.
- Drain meat and onions and add to stock pot.
- Stir everything together adding salt & pepper.
- Add tomato juice.
- Let simmer for at least 30 minutes, but better longer.

Ingredients:
- 1bg noodles (shells, elbow, bow tie, etc.)
- 2 lb ground meat (beef, turkey, chicken)
- 2 cans diced tomatoes - drained
- 1 can tomato juice
- 1 yellow onion diced
- salt & pepper to taste
Directions:
- Cook noodles as normal (al dente)
- While noodles are cooking, brown meets with onion
- Drain 1/2 the grease off meat and onions
- Add all ingredients together
Olive, Artichoke, & Tuna Salad
Ingredients:
- 1/3c. green olives - chopped
- 1/3c. kalamata olives - chopped
- 1/3c. black olives - chopped
- 1 cn artichoke - chopped
- 4 cn tuna (light, packed in water) - drained
- 1 tsp oregano (Italian seasoning will work in a bind)
- 1/2c. Mayo
- 1 tsp lemon juice
Directions:
- Mix all ingredients together
Ambrosia Salad
Ingredients:
- 1 cn pineapple chunks - drained
- 1 cn crushed pineapple
- 1 cn mandarin oranges - drained
- 1 jar maraschino cherries (no stems) - drained
- 1 c sour cream
- 1/2 container of whipped topping
- 1 bg flavored mini marshmallows
- 1 box (3oz) pistachio pudding
Directions:
- Mix all ingredients together
- Chill for 1 hour
Cake Cookies
Ingredients:
- 1 bx cake mix (any flavor, we used Devil's Food Cake)
- 3 eggs
- 1/3 c oil
- add any mixing you want, if any (choc. chips, nuts, dried fruit, candy, etc)
Directions:
- Preheat oven to 350 degrees
- Mix ingredients together
- Roll into balls (smaller make 36ish)
- Bake 9 minutes
- Let sit on cookie sheet for 2 minutes
